My 7 year old has always been pretty open minded about vegetables and trying new foods.  There aren't many things he dislikes.  My 10 year old is more of a challenge, but I LOVE challenges.  So when life gives you a picky eater, make BROWNIES.

 

Seriously.  These are Chocolate Zucchini Brownies...made without any grains or refined sugars.  I used THIS RECIPE from Redeeming the Table, omitting the walnuts, adding 1.5 cups of finely grated zucchini, and using dark chocolate chips.  My 10 year old loved these.  The zucchini broke down into the batter so that you couldn't see it, but it made these incredibly moist.

We served these at Super Bowl, and when I asked my sister if she had one, she quickly replied "I had 4".
